Rossell Family Spaghetti Sauce

This is Dad's version: San Marzano is a must! Add pepperoni to taste like Aunt DeeDee's version, add a Tablespoon of sugar to taste like Grandma's.

Ingredients

  1. 1 lb each of hamburger, Italian sausage, pork, and/or pepperoni
  2. 1 medium onion, finely chopped
  3. 5 cloves of garlic (or more), minced
  4. 2 Tbsp tomato paste
  5. 3 28 oz large cans of tomato puree (San Marzano)
  6. 1 16 oz can of chopped tomatoes (San Marzano)
  7. 2 Tbsp each of thyme, oregano, parsley, basil
  8. 1 Tbsp red pepper flakes
  9. 2 Tbsp olive oil
  10. Salt and pepper

Preparation

First, brown your meat together, remember to season each step. Add salt and pepper, oregano and red pepper flakes. Drain grease.

Sauté onion and 2 Tbs of olive oil. Add garlic, tomatoes, puree, herbs, and S&P to taste. Add a cup of water or wine. Bring to a slow simmer, then add the cooked meat. Let simmer as long as you need, adding water the longer you leave it on the stove.

*For a creamy/orange sauce, add a half of block of cream cheese with 5 minutes left in your simmer.

Cook spaghetti according to package instructions and drain well. Put hot pasta into a bowl and toss until coated with sauce. You must toss spaghetti in sauce!

Serve with pecorino cheese, Italian bread, and red wine, of course.
